As I wandered off to sleep last night, a curiosity spilled over my mind. What if when we die, we only wake up?
What if sleep is to wake, as life is to death? What if existence is just the awakening dream? A dream equivalent to our post-life existence? A creative wonderland of a greater life beyond this one?
As a butcher and as a mother, I spend the majority of my daydreaming time pondering the mysteries of life and death. I am humbled by the contrast between the expanse of the unknown, versus the known.
I find myself surrendering to the unknown increasingly this year. We reinvented our business from a farm and farmer’s markets, to a farm and restaurant. This was not the plan.
At our sweet, intimate, dimly-lit, 5-course, farm-to-table restaurant, I frequently share tableside, “It was never our intention to open a restaurant in NW Portland. Long story short, here we are.”
Our menu is the metamorphosis of the season of each day and of ourselves. Mirroring our menu, everyday we are changing and evolving, with the tide of the seasons, with the bounty and richness of the farms, fields, forests, and life.
My visions of what our little shop on NW Thurman was going to be have been altered by the desires of our customers and the deep hunger and thirst for the authenticity that we provide.
For some years, George and I have espoused our anthem, ‘Pleasure to the palates of the people’.
And that is what we shall continue to do.
