Crêpes
This recipe is another staple in our household, a delight we enjoy weekly. Crêpes are delicious for breakfast, lunch, dinner or dessert. Most commonly we savor them for breakfast with summer jam preserves, but we equally appreciate them rolled up with duck rillettes, smoked salmon or a fried farm egg.

Directions

George's Crêpe recipe


In a medium mixing bowl sift together:

 

  • 3/4 cup all purpose or pastry flour
  • a fat pinch of salt
  • a Tablespoon of sugar

Add and whisk until smooth:

  • 2 large eggs
  • 1/2 cup whole milk

Add and whisk again until smooth:

  • 3 ounces melted, unsalted butter

Add and whisk until smooth:

  • another 1/2 cup of milk
  • a teaspoon or so of vanilla extract

Cook on crêpe pans or a crêpe iron over medium low heat until just colored with a lacy pattern, about a minute or two. Stack on a plate and cover with a kitchen towel to keep warm.

Serve with honey or jam.

They are also fantastic to wrap around savory delights, such as a fried egg, smoked salmon or sauteéd mushrooms.
