Probably our favorite item on the Magic Meat Truck, and certainly one of the most popular, our duck breast roulades are effortless to prepare, hearty and delicious enough to enlighten any meal, yet sophisticated and elegant enough to serve at the finest feast.
Preheat oven to 400F
Place duck roulade in a cast iron skillet or other ovenproof cookware. Roast in hot oven for 25-35 minutes, or until skin is crispy and golden-brown and internal temperature is 120F. Remove to a platter and allow to rest for 10-20 minutes. Slice into 1 centimeter rounds and serve.
I like to accompany with a starchy dish, such as mashed potatoes, roasted root vegetables, rice or polenta. I also find a hearty braised green is a great pairing. Something like kale, swiss chard or brussels sprouts.
